Kale is a leafy green that is most commonly used as a garnish. However, it is jam-packed with beta-carotene, vitamins A and C, calcium and Indole-3-Carbinol. Indole-3-Carbinol produces enzymes that metabolize carcinogens. Researchers are evaluating (in animal studies) its ability to prevent ovarian lesions from turning cancerous.
